This is such a delicious and easy mahi recipe that you’re going to love! I’m always in need of healthy and quick dinner ideas and this blackened mahi mahi salad is exactly that! It’s so simple and quick to make that you can easily pull it together on busy weeknights. This is the best mahi mahi recipe ever!
The fish fillets are seasoned with my favorite seasoning combo and blackened to perfection. Mahi is juicy, tender and full of flavor! On top of all the deliciousness, mahi mahi is an excellent source of protein, potassium, selenium, and vitamin B12.
HOW TO MAKE BLACKENED MAHI MAHI
MAHI SEASONING
smoked paprika
cumin
garlic powder
cayenne pepper
pink salt
To make the blackened seasonings, mix all the spices in a small bowl and rub it over the outside of the fish.
HOW TO COOK MAHI MAHI ON THE STOVE
Place mahi fillets on a plate and pat to dry with paper towels. Rub the blacken seasoning all over the fish.
Meanwhile, heat oil in a large cast-iron or non-stick skillet. Add fish to pan; and cook 2-3 minutes on each side until golden brown and cooked through.
HOW TO GRILL MAHI MAHI
Preheat an outdoor grill to about 450F. Brush the grill grates with oil so the fish doesn’t stick.
Place mahi fillets on a plate and pat to dry with paper towels. Rub the blacken seasoning all over the fish.
Grill the fish for 4-5 minutes per side, or until golden brown and cooked through.
Make sure not to overcook mahi mahi. Once overcooked, it will become dry and rubbery.
CREAMY AVOCADO CILANTRO DRESSING
Now let’s get to this creamy avocado dressing. It’s such a delicious and healthy alternative to any dairy dressings. It’s creamy, tangy and my favorite dressing for mahi mahi salad! It will also go great with different types of salads. The best part? It takes just 5 minutes to make!
INGREDIENTS
Ripe avocado
Cilantro
Lime
Rice vinegar or apple cider vinegar
Extra virgin olive oil
Cumin
Filtered water
Salt, black pepper
Throw all the ingredients into a blender or food processor, and blend until smooth and creamy!
SALAD TO SERVE WITH MAHI MAHI
You can chop some red cabbage, kale or use a salad mix. I used my favorite Trader Joe’s cruciferous crunch collection!
Top the bed of salad with mahi, pickled red onions, cucumbers and avocado! Or use any toppings of choice!
