Description

This Blackened Mahi Mahi Salad with Avocado Cilantro Dressing is such a light, filling and healthy dish.  Mahi is blackened on the stove and served over greens with delicious toppings and tossed with creamy avocado cilantro dressing. 


Ingredients

BLACKENED MAHI MAHI

2 tbsp avocado oil

2 mahi mahi fillets

1 tsp smoked paprika

1 tsp cumin

1/2 tsp garlic powder

1/4 tsp cayenne pepper

1/2 tsp pink salt

AVOCADO CILANTRO DRESSING 

1 medium avocado, ripe

1/2 bunch of cilantro

lime juice of 1/2 lime

1 tbsp rice or apple cider vinegar

2 tbsp extra virgin olive oil

1/4 tsp cumin

1/4-3/4 cup filtered water

1/4 -1/2 tsp pink salt

TOPPINGS

5-6 cups mixed greens (I used a mix from Trader Joe’s)

pickled red onions

avocado, sliced

cucumber, sliced

mango, sliced


Instructions

  1. To make the dressing, place avocado, lime juice, vinegar, oil, cumin, water and salt in a high speed blender or food processor. Blend until smooth and creamy. Add more water for thinner consistency and more salt if needed. Set aside.
  2. Place mahi mahi fillets on a plate and pat to dry with paper towels as much as possible. In a small bowl, mix together smoked paprika, cumin, garlic powder, cayenne and salt. Rub seasoning over fish. 
  3. Meanwhile, heat oil in a large cast-iron skillet or a non-stick skillet.  Add fish to pan; and cook 2-3 minutes on each side until golden brown and cooked through.
  4. In the meantime add greens in a large serving plate. Add all the toppings, mahi mahi and pour over the dressing. Serve immediately.
