TOPPINGS
5-6 cups mixed greens (I used a mix from Trader Joe’s)

cucumber, sliced

Instructions
- To make the dressing, place avocado, lime juice, vinegar, oil, cumin, water and salt in a high speed blender or food processor. Blend until smooth and creamy. Add more water for thinner consistency and more salt if needed. Set aside.
- Place mahi mahi fillets on a plate and pat to dry with paper towels as much as possible. In a small bowl, mix together smoked paprika, cumin, garlic powder, cayenne and salt. Rub seasoning over fish.
- Meanwhile, heat oil in a large cast-iron skillet or a non-stick skillet. Add fish to pan; and cook 2-3 minutes on each side until golden brown and cooked through.
- In the meantime add greens in a large serving plate. Add all the toppings, mahi mahi and pour over the dressing. Serve immediately.
