It doesn’t get easier than this Burrata with Tomato and Basil. It’s the perfect summer salad to serve for gatherings, side dish or lunch!
Burrata is such a star ingredient and it will make any dish special. Burrata is a ball of mozzarella filled with creaminess and it’s my favorite type of cheese to add to summer dishes.
I absolutely love this summer burrata salad because it highlights those sweet and plump summer tomatoes. Pickled red onions add a touch of acidity and croutons add that crunch that we all love in salads.
BURRATA WITH TOMATO AND BASIL INGREDIENTS
Tomatoes and cherry tomatoes, halved. Heirloom tomatoes are best but use the type that’s available to you!
Pickled red onions. I always keep a batch of these apple cider vinegar pickled onions on hand
Burrata cheese
Homemade croutons. Cut up 1-2 slices of sourdough bread and cook in olive oil until. nice and golden!
Fresh basil
Extra virgin olive oil
Maldon sea salt flakes
Freshly ground black pepper
Heirloom tomato and burrata salad is for sure one of my favorite summer salads. All you need is few ingredients, no dressing needed just a good quality extra virgin olive oil and you’ve got yourself such an easy and full of flavor side dis/app or lunch! I hope you love this as much as I do!

Ingredients

2–3 medium tomatoes, sliced
1 cup cherry tomatoes, halved
1/4 cup pickled red onions
1–2 burrata balls
1 cup homemade croutons (about 1–2 sliced bread)
Handful of fresh basil
Extra virgin olive oil
Freshly ground black pepper
Instructions
To make the croutons, cut up bread and cook in olive oil until golden. Arrange tomatoes on a platter. Top with onions, croutons, basil. Drizzle with olive oil and sprinkle with sea salt and freshly ground pepper.
