It has been my go-to weeknight dinner recipe all summer long. It’s quick to make with a short ingredient list and it is such a great recipe to use up those plump summer cherry tomatoes.
Bursting tomatoes in the skillet with olive oil, garlic and wine adds tons of flavor. But my favorite part of this dish recipe is burrata cheese. It takes the pasta to the next level adding so much richness and creaminess. Tomatoes and burrata is truly one of the most delicious summer creations.
BURST TOMATO BURRATA PASTA INGREDIENTS
extra virgin olive oil
garlic cloves
cherry tomatoes
dry white wine
chili flakes
burrata cheese
fresh basil
parmesan cheese (optional)
HOW TO MAKE WHITE WINE CHERRY TOMATO SAUCE
Start off with cooking cherry tomatoes with olive oil, garlic, pinch of red chili flakes and salt. Then add dry white wine and cook until tomatoes begin to blister. Toss in cooked pasta noodles, fresh basil and parmesan if desired. Add reserved pasta water to thin out the sauce. Top with burrata cheese and serve immediately.

Ingredients

8 oz pasta of choice, I used fettucine
3 tbsp extra virgin olive oil
2 garlic cloves, minces
3 cups cherry tomatoes
1/4 cup dry white wine
1/3 cup reserved pasta water
pinch of chili flakes
1/2 tsp sea salt or more to taste
black pepper
8 oz burrata cheese
handful of fresh basil, chopped
1/4 cup parmesan cheese (optional)
Instructions
- Preheat olive oil over medium low heat. Add garlic, tomatoes, pinch of red pepper flakes and salt. Cook for couple of minutes, stirring frequently. Add white wine and cook for about 10 minutes until tomatoes begin to burst. Stir tomatoes occasionally and lower the heat if needed.
- Meanwhile, cook pasta al dente according to the directions on the package. Reserve 1/3 cup of pasta water.
- Drain pasta (don’t rinse off) or using kitchen tongs transfer to the tomato mixture. Toss pasta with the sauce, adding reserved pasta water a little at a time (you may not use the entire 1/3 cup). Stir in chopped basil and parmesan.
- Serve immediately topping with burrata cheese and fresh basil.
