Description

This Burst Tomato Burrata Pasta is the perfect summer weeknight dinner. Flavorful white wine cherry tomato sauce is tossed with fettuccine noodles, fresh basil and topped off with burrata. Ready in less than 30 minutes and bursting with so much flavor.


Ingredients

Scale

8 oz pasta of choice, I used fettucine

3 tbsp extra virgin olive oil

2 garlic cloves, minces

3 cups cherry tomatoes

1/4  cup dry white wine

1/3 cup reserved pasta water

pinch of chili flakes

1/2 tsp sea salt or more to taste

black pepper

8 oz burrata cheese

handful of fresh basil, chopped

1/4 cup parmesan cheese (optional)


Instructions

  1. Preheat olive oil over medium low heat. Add garlic, tomatoes, pinch of red pepper flakes and salt. Cook for couple of minutes, stirring frequently.  Add white wine and cook for about 10 minutes until tomatoes begin to burst. Stir tomatoes occasionally and lower the heat if needed.
  2. Meanwhile, cook pasta al dente according to the directions on the package. Reserve 1/3 cup of pasta water.
  3. Drain pasta (don’t rinse off) or using kitchen tongs transfer to the tomato mixture. Toss pasta with the sauce, adding reserved pasta water a little at a time (you may not use the entire 1/3 cup). Stir in chopped basil and parmesan.
  4. Serve immediately topping with burrata cheese and fresh basil.
