Creamy Tomato Goat Cheese Pasta

Description

This Creamy Tomato Goat Cheese Pasta is such an easy weeknight dinner recipe. It’s made with a few simple ingredients and ready in less than 25 minutes!


Ingredients

Scale

8 oz pasta of choice, uncooked

1 tsp extra virgin olive oil

1 small onion, chopped (about 1/2 cup)

2 cloves garlic minced

1 14  oz can crushed tomatoes

1 tsp Italian seasoning

4 ounces goat cheese or to taste

1/4 cup fresh basil, packed 

Salt & black pepper to taste


Instructions

  1. Cook pasta according to directions on the package reserving around 1/2 cup pasta water, set aside.
  2. Meanwhile, in a medium saucepan, preheat oil. Add onion and sauté until softened, about 3-4 minutes. Add garlic,  italian seasonings and cook for about one more minute, stirring frequently.
  3. Add crushed tomatoes and goat cheese. Stir until creamy.  Simmer for about 5-8 minutes.
  4. Season with salt,  pepper and stir in fresh basil. Add cooked pasta.
  5. If the sauce is too thick, add pasta water a little at a time until desired consistency.
