This Fresh Grilled Peach Burrata Salad just screams summer! Juicy peaches are grilled to perfection and served over a bed of arugula with creamy burrata cheese, tomatoes and red onion. The salad is tossed with a homemade basil mint vinaigrette. WHAT IS BURRATA CHEESE?
If you haven’t had burrata, make sure you get your hands on it asap. I always thought mozzarella is my favorite “summer cheese” but burrata officially took over.
Burrata cheese is basically formed into a pouch mozzarella filled with cream. I’m telling you, it’s insanely good. You can serve it with sprinkle of salt, pepper and drizzle of olive oil over a good bread, crackers, pasta pizza or salad. Basically everything. GRILLED PEACHES BURRATA SALAD
Start with grilling the peaches. You can use outdoor grill or a grill pan for this. Grilling peaches is must because they develop this amazing almost buttery flavor. Drizzle sliced peaches with extra virgin olive oil and toss to combine. Grill for about 2-3 minutes per side or until grill marks appear. Grilled peaches and burrata is my favorite combo right alongside tomatoes.
BASIL MINT VINAIGRETTE
Mint basil dressing might be my favorite summer salad dressing. Made with fresh basil and mint straight from my herb garden, extra virgin olive oil, lemon, dijon mustard and honey. The dressing comes together super quick and takes the salad to the next level!This summer peach burrata arugula salad is perfect for summer barbecues, picnics and potlucks. I love serving it as a summer side dish with pasta, pizza or a main dish topped with grilled shrimp, fish or chicken! It goes great with anything.

Ingredients

3–4 cups arugula or greens of choice
2 firm peaches, quartered
1 cup cherry tomatoes, halved
1/2 medium red onion, thinly sliced or pickled red onions
8 oz burrata cheese
extra virgin olive oil
BASIL MINT VINAIGRETTE
1/3 cup extra virgin olive oil
1/4 cup fresh basil leaves, chopped
1/4 cup fresh mint leaves, chopped
juice and zest of one lemon
1 tbsp honey
1 tsp dijon mustard
1/4 tsp sea salt or to taste
Instructions
- Drizzle sliced peaches with extra virgin olive oil and toss to combine. Grill for about 2-3 minutes per side or until grill marks appear.
- In a mason jar combine all the dressing ingredients. Shake to combine.
- Assemble the salad. On a large platter layer arugula, grilled peaches, tomatoes, onion and torn up burrata cheese. Drizzle with basil mint vinaigrette right before serving.
