Grilled Peach Burrata Salad with Basil Mint Vinaigrette

Description

This Fresh Grilled Peach Burrata Salad just screams summer! Tossed with a homemade basil mint vinaigrette. You and your family will love this full of flavor and refreshing summer salad!


Ingredients

Scale

34 cups arugula or greens of choice

2 firm peaches, quartered

1 cup cherry tomatoes, halved

1/2 medium red onion, thinly sliced or pickled red onions

8 oz burrata cheese

extra virgin olive oil

BASIL MINT VINAIGRETTE

1/3 cup extra virgin olive oil

1/4 cup fresh basil leaves, chopped

1/4 cup fresh mint leaves, chopped

juice and zest of one lemon

1 tbsp honey

1 tsp dijon mustard

1/4 tsp sea salt or to taste


Instructions

  1. Drizzle sliced peaches with extra virgin olive oil and toss to combine. Grill for about 2-3 minutes per side or until grill marks appear.
  2. In a mason jar combine all the dressing ingredients. Shake to combine.
  3. Assemble the salad. On a large platter layer arugula, grilled peaches, tomatoes,  onion and torn up burrata cheese. Drizzle with basil mint vinaigrette right before serving.
