These Strawberries and Cream Pancakes are perfectly fluffy, healthy and delicious. Topped with strawberry coconut cream and fresh strawberries. They make the perfect breakfast that comes together in minutes!
These strawberries and cream pancakes are the result of the “drink rosé while doing a pancake tutorial”. I got together with Ciarra from Peanut Butter plus Chocolate last week to create a video of the behind the scenes process. From recipe making to setting up the shoot, styling and photographing it. Turned out we had way too much fun, drank too much wine and didn’t do the video right so sadly we’re not able to post it. Well, I guess it happens. but the pancakes turned out to be AMAZING! We took Ciarra’s Lemon Poppy Seed Pancakes, left out poppy seeds, changed up a few little things, added strawberry coconut whipped cream and fresh strawberries. And there you have it – Strawberries and Cream Pancakes. Perfect for a breakfast or weekend brunch!
As you probably know buttermilk makes the pancakes tender and super fluffy. In this recipe, we made a buttermilk alternative by combining almond milk and lemon juice. It’s a great option if you don’t have buttermilk or just don’t like using it! It works just as good.

INGREDIENTS YOU NEED TO MAKE THESE STRAWBERRIES AND CREAM PANCAKES:
eggs
overripe bananas
plant based milk
lemon
a can of full fat coconut milk
Don’t forget it to top off your pancakes with the strawberry coconut cream. It’s to die for. Thick, rich, creamy and delicious. There’s a few things you need to remember when making a coconut whipped cream.
First, the coconut milk must be cold. That’s when the thick cream separates. Don’t forget to pop it in the fridge a night before! What I like to do, is always store a couple of cans in the fridge. Some of the coconut milks won’t solidify into two layers. I tried different brands and I found that this one works the best of all! What’s more, you’ll need to sweeten it up slightly. I like to use either a maple syrup or birch xylitol. Once you place coconut cream and sweetener in the bowl, all you need to do is mix with with an electrical mixer for about one minute (until creamy). Then add in powdered freeze dried strawberries and mix until just combined.
