This Healthy Vegetable Fried Rice with Yum Yum Sauce is one of my go-to lunches and dinners throughout the week. It’s easy to make, healthy and you probably already have most of the ingredients on hand!
IS FRIED RICE HEALTHY?
It really depends on the ingredients used and the way it is cooked. Restaurants fried rice usually tastes good but is far from healthy since it’s high in unhealthy fats and salt. The good news is, you can make a healthy fried rice at your home, with no time and simple ingredients! Plus, it tastes just as good as the original (if not better)!
INGREDIENTS YOU NEED TO MAKE HEALTHY VEGETABLE FRIED RICE
Avocado oil – it’s great for cooking, frying and baking because of its high smoke point!
Eggs – use pasture-raised if possible
Vegetables: red bell pepper, onion, carrots, green peas, green onions,
Ginger and garlic cloves
Cooked rice – use whatever rice you like! Ideally, you would use a cold, chilled rice. Freshly cook rice won’t fry as good! So if you’re short on time, cook the rice and place it in the freezer for about 10 minutes or refrigerator about 30 min.
Coconut aminos or soy sauce – I love using coconut aminos instead of soy sauce in all my dishes! If you’ve never tried it it’s a salty, savory and a little sweet sauce made from the fermented sap of coconut palm. It’s soy, wheat and gluten-free, making it a healthier alternative to soy sauce!
You can use any frying pan that you have to make this vegetable fried rice, but my personal favorite is this one!
VEGETABLES TO PUT IN FRIED RICE
You can use pretty much any vegetables in fried rice! My favorite is bell peppers, carrots, broccoli, green beans, seeded jalapeños, onions, mushrooms and peas. If you’re really short on time, keep a bag of small chopped frozen veggies in the freezer for a quick fried rice recipe!
HOW TO MAKE FRIED RICE HEALTHY
Fortunately, here’s a few ways to make the fried rice healthy!
Use brown rice instead of white! It has more nutrients, fiber and slower digestion which makes it more filling than white rice.
Use healthy oil. My all time favorite oil for cooking is avocado oil. It’s a heart-healthy oil that has a high smoke point which makes it a great alternative for cooking, baking and frying!
Use pasture-raised eggs. These kind of eggs are probably the healthiest type of eggs you can get. They are more nutritious, and the hens that lay them are allowed free access to the outside and eat much more natural diet!
Use coconut aminos. It’s soy, wheat and gluten-free, making it a healthier alternative to soy sauce!
VEGETABLE FRIED RICE WITH EGG
Good quality eggs are a great part of a healthy diet and are a good source of protein as well as tons of nutrients. Addition of eggs in this fried rice adds protein, vitamins, and nutrients!
TIPS FOR BEST VEGETABLE FRIED RICE WITHOUT SOY SAUCE
Chill the rice. As I mentioned earlier, ideally, you would use a cold, chilled rice. Freshly cook rice won’t fry as good! So if you’re short on time, cook the rice and place it in the freezer for about 10 minutes or refrigerator about 30 min.
Avocado oil. This high smoke oil doesn’t’ burn as fast as for example butter.
Use small chopped vegetables. Make sure they’re softened before adding the rest of the ingredients.
Don’t stir the rice constantly. Let it crisp up without touching for a few minutes!
Add more coconut aminos at the end!
Make the yum yum sauce!! It’t the best.
HOMEMADE BEST YUM YUM SAUCE
Yum Yum Sauce is so easy to make and just as good as the one you had at a Japanese hibachi restaurant! It’s a combination of tangy, savory and sweet flavors and it goes amazing with this vegetable fried rice.

Ingredients
FRIED RICE
3 tbsp avocado oil, divided
2 pasture-raised eggs, large
1 cup red bell pepper, chopped
1 jalapeño, seeded and chopped
1 cup onion, chopped
1 cup carrots, chopped
1/2 cup green peas
3 green onions, chopped
2 tsp ginger, mince
4 garlic cloves, minced
3 cups cooked rice (1.5 cup uncooked), brown or white
2 tbsp coconut aminos or soy sauce
YUM YUM SAUCE
1/2 cup avocado oil mayo
1-2 tbsp hot sauce
1 tbsp ketchup
3-4 tbsp filtered water
½ tsp rice vinegar
Instructions
Heat 1/2 tablespoon of oil in a large sauté non-stick pan over medium-high heat. Add egg, and cook until scrambled. Then transfer scrambled eggs to a plate.
Add 1 1/2 tbsp oil to the pan. Add bell pepper, jalapeño, onion and carrots and season with a pinch of salt. Cook for about 5 minutes or until the vegetables soften.
Add peas, green onions, garlic and ginger and cook for another minute. Add remaining tablespoon of oil, rice, coconut aminos and stir until combined. Spread the mixture evenly in the pan and fry for about 2-3 minutes without touching so the rice can crisp up on the bottom. Stir and cook for another 2-3 minutes or longer until you can see the rice crisp up. Then add in the eggs and stir to combine. Taste and season with extra coconut aminos or salt if needed.
To make the sauce, combine all the ingredients in a small bowl. Serve the fried rice with a drizzle of yum yum sauce and fresh green onions if desired.
