Salmon is such a versatile fish. It’s tender, quick to cook and you can either bake, saute or grill. You can do just about anything with it and it always is so tasty. I eat this fish at least once a week because of its flavor as well as nutritional benefits!
Rich in heart-healthy omega-3s, salmon is an amazing protein source that’s also low in saturated fat. What’s important is to make sure that the salmon you buy is wild-caught, not farmed. Beside health benefits, wild-caught is much deeper and more intense flavor too!
This herb roasted salmon is so easy to make. Seriously. You will start by layering baking dish with cherry tomatoes. Then add salmon fillets, season wit salt, pepper and top off with herb mixture. Pour a little dry wine over cherry tomatoes – that will make the salmon perfectly moist and tender!
INGREDIENTS YOU NEED TO MAKE THIS HERB BAKED SALMON:
wild-caught salmon fillets
ghee butter
garlic
herbs such as basil, thyme, rosemary
dry white wine
cherry tomatoes
Baking the fish in a mixture of cherry tomatoes and wine keeps it moist as it bakes and flavorful. Since salmon fillets come in different sized and shapes, baking time will vary. You want to bake it until it’s soft, flaky and slightly pink on the inside. The thickest part of the salmon should read 135-145 degrees F. Depending on your preference!
