Rustic Strawberry Galette with Thyme

Strawberry season is not complete without making strawberry galette. This Rustic Strawberry Galette with Thyme is such a simple, full of flavor and delicious summer dessert. You will want to serve it all season long! 

The best part about making this strawberry galette is that you can’t really mess it up. The more messy the better. That’s what makes it look “rustic”! I’m all about that messy look, so galette is one of my favorite desserts to make!

What’s even more important is obviously the flavor. This strawberry galette is super fresh, delicious and not too sweet. Strawberries roast to a perfection without being mushy. Addition of starch helps thicken the strawberry juices and gives it the perfect gooey texture.

You can also use pretty much any fruit or fruit combo. Feel free to substitute it with cherries, peaches, blueberries or anything you’d like!

As for the crust, I’m using my go-to recipe from this Roasted Vegetable Galette. It’s surprisingly very easy to make and healthier than classic pie crust. Made with 100% whole wheat flour, grape seed oil, a little coconut sugar,  iced cold water and a pinch of salt. Those are all the ingredients you need to make this galette crust!

While the dough is resting in the fridge, toss all the strawberries, starch, sugar, vanilla and thyme. Allow to sit for at least 10 minutes so that the tapioca can start to absorb all the fruit juices. Then assemble the galette together by leaving about 2 inches around the border and then folding up the crust.  I’ll say it again – don’t worry if it doesn’t look perfect. The messier the better!

Ingredients

CRUST:

1 1/4 cup white whole wheat flour

1/4 cup extra virgin olive oil

1/4 cup + 2 tbsp ice cold water, divided

1 tsp coconut sugar

1/4 tsp salt

FILLING:

2 - 2 1/2 cups strawberries, sliced or halved

1 tbsp tapioca

1/4 cup coconut sugar

1/2 tsp pure vanilla extract

1 tsp fresh thyme leaves

ASSEMBLY:

1 egg, beaten (optional)

thyme sprigs

 

Instructions

1. In a mixing bowl, combine flour, oil, salt and 1/4 cup water. Stir to combine. Add 2 tablespoons of water if the dough is too dry.
2. Transfer the dough to a lightly floured surface and form into a ball. Wrap in plastic wrap and place in the refrigerator for around 40 minutes.
3. Meanwhile, in a large bowl toss strawberries, tapioca, coconut sugar, vanilla and thyme. Set aside.
4.  Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
5. Roll out your dough into a 13-inch round on a lightly floured surface. Then transfer the dough to a baking sheet. Layer with strawberry mixture in the center of the dough, leaving a 1 1/2 to 2-inch border all around. Gently fold over the pastry border. Pour any remaining juices left in the bowl over the fruit. Brush the edges of the dough with egg and sprinkle with coconut sugar.
6. Bake the galette until the crust is fully cooked and golden brown, about 35-45 minutes.  Remove from the oven. Pour all the juices that have spilled during baking over the galette. Let it cool slightly before slicing.
