These Oven Baked Greek Fries are perfectly crispy on the outside and packed with so much flavor. They’re topped with feta cheese, fresh herbs and served with a yogurt dill sauce. They make the perfect appetizer, side dish and a snack. I promise these will become your favorite!
WHAT ARE GREEK FRIES?
Greek fries are made out of thick cut potato wedges seasoned with garlic, feta and herbs. They’re usually fried in olive oil. These greek oven fries are a true perfection. Perfectly crispy and golden on the outside and tender on the inside. The addition of fresh herbs, feta cheese and dill yogurt sauce take these to whole another level! Plus they’re baked in the oven, not fried! I love this recipe because it’s super quick and easy to make! It doesn’t require presoaking the potatoes.
BAKED GREEK STYLE FRIES INGREDIENTS
Russet potatoes, cut into wedges
Extra virgin olive oil or avocado oil
Garlic powder
Fresh herbs such as: oregano, majoran , dill, parsley or thyme ( I used a mix of oregano, majoran and dill)
Feta cheese, crumbled
HOW TO MAKE THEM
Preheat oven to 450 degrees F and line a large baking sheet with parchment paper.
Toss potato wedges with oil, garlic powder and salt. Arrange the potatoes in a single layer on the sheet pan. Bake for 20 minutes. Then take them out of the oven and carefully flip. Return to oven and bake for additional 10 minutes until crisp and golden brown.
Take the fries out of the oven, toss with the remaining oil and fresh herbs. Place on a platter and top with feta crumbles. Serve with the yogurt dill sauce.
TIPS FOR THE BEST GREEK STYLE BAKED FRIES
Line a baking sheet with parchment paper so the fries won’t stick. Another option would be preheating a lightly greased pan until hot first. That actually also makes the fries super crispy.
Make sure the fries are the same size so they cook evenly.
Arrange the wedges in the single layer. Make sure they don’t touch each other.
Right when they come out, toss with the remaining oil and fresh herbs.Serve immediately while hot and crispy.
The yogurt dill sauce is perfectly tangy and it makes an amazing dip for these homemade greek fries.

1 1/2 pound russet potatoes, cut into wedges
4 tbsp extra virgin olive oil, divided
1/2 tsp garlic powder
3–4 tbsp fresh herbs such as: oregano, majoran , dill, parsley or thyme
1/2 cup feta cheese, crumbled
YOGURT DILL SAUCE
1/2 cup greek yogurt
2 tbsp lemon juice
½ tsp lemon zest
4 tbsp fresh dill
salt, black pepper
Instructions

- Toss potato wedges with 3 tbsp oil, garlic powder and salt. Arrange the potatoes in a single layer on the sheet pan. Bake for 20 minutes. Then take them out of the oven and carefully flip. Return to oven and bake for additional 10 minutes until crisp and golden brown.
- Meanwhile, make the yogurt sauce. In a small bowl place yogurt, lemon juice, zest, dill, salt and pepper. Mix until combined and set aside.
- Take the fries out of the oven, toss with the remaining oil and fresh herbs. Place on a platter and top with feta crumbles. Serve with the yogurt dill sauce.
