Description

These Oven Baked Greek Fries are perfectly crispy on the outside and packed with so much flavor. They’re topped with feta cheese, fresh herbs and served with a yogurt dill sauce. They make the perfect appetizer, side dish and a snack. I promise these will become your favorite! 


Ingredients

Scale

1 1/2 pound russet potatoes, cut into wedges

4 tbsp extra virgin olive oil, divided

1/2 tsp garlic powder

34 tbsp fresh herbs such as: oregano, majoran , dill, parsley or thyme

1/2 cup feta cheese, crumbled

YOGURT DILL SAUCE

 1/2 cup greek yogurt

2 tbsp lemon juice

½ tsp lemon zest

4 tbsp fresh dill

salt, black pepper


Instructions

  1. Preheat oven to 450 degrees F and line a large baking sheet with parchment paper.
  2. Toss potato wedges with 3 tbsp oil,  garlic powder and salt. Arrange the potatoes in a single layer on the sheet pan.  Bake for 20 minutes. Then take them out of the oven and carefully flip. Return to oven and bake for additional 10 minutes until crisp and golden brown.
  3. Meanwhile, make the yogurt sauce. In a small bowl place yogurt, lemon juice, zest, dill, salt and pepper. Mix until combined and set aside.
  4. Take the fries out of the oven, toss with the remaining oil and fresh herbs. Place on a platter and top with feta crumbles. Serve with the yogurt dill sauce.
