Strawberry season is not complete without making strawberry galette. This Rustic Strawberry Galette with Thyme is such a simple, full of flavor and delicious summer dessert. You will want to serve it all season long!
The best part about making this strawberry galette is that you can’t really mess it up. The more messy the better. That’s what makes it look “rustic”! I’m all about that messy look, so galette is one of my favorite desserts to make!
What’s even more important is obviously the flavor. This strawberry galette is super fresh, delicious and not too sweet. Strawberries roast to a perfection without being mushy. Addition of starch helps thicken the strawberry juices and gives it the perfect gooey texture.
You can also use pretty much any fruit or fruit combo. Feel free to substitute it with cherries, peaches, blueberries or anything you’d like!
As for the crust, I’m using my go-to recipe from this Roasted Vegetable Galette. It’s surprisingly very easy to make and healthier than classic pie crust. Made with 100% whole wheat flour, grape seed oil, a little coconut sugar, iced cold water and a pinch of salt. Those are all the ingredients you need to make this galette crust!
While the dough is resting in the fridge, toss all the strawberries, starch, sugar, vanilla and thyme. Allow to sit for at least 10 minutes so that the tapioca can start to absorb all the fruit juices. Then assemble the galette together by leaving about 2 inches around the border and then folding up the crust. I’ll say it again – don’t worry if it doesn’t look perfect. The messier the better!
