Description

These Spicy Chipotle Beef tacos are made with grass-fed ground beef, easy homemade taco seasoning, peach salsa and corn tortillas. Tacos are easy to make and ready in just 25 minutes!

BEEF TACOS

8 corn tortillas, warmed

1 pound grass-fed beef

1 small onion, chopped

3 garlic cloves, minced

2 tsp chipotle powder

1 tsp cumin

3 tbsp tomato paste

3/4 tsp sea salt

PEACH SALSA

1 large peach, diced

1 large tomato, diced

1/3 cup red onion, chopped

1/2 bunch cilantro, chopped

1/4 tsp chili powder

juice of one small lime

sea salt


Instructions

  1. Heat a large pan on a medium high heat. Add beef, onion and garlic. Using spatula break up the beef into small crumbles. Cook until the meat is done and no longer pink. Stir in chipotle powder, cumin, tomato paste and salt. Cook for additional two minutes.
  2. Meanwhile, combine all the salsa ingredients in a bowl and sir until combined.
  3. Assemble the tacos. Place a tortilla directly onto the burner on the gas stove, and heat for about 10 seconds, then flip it over using kitchen tongs and warm for another 10 seconds. Fill with ground beef and top with peach salsa. Serve with lime wedges.
