These easy, moist and healthy Vegan Banana Chocolate Chip Muffins are made 100% whole wheat and naturally sweetened. All you need is one bowl, ingredients that you probably already have and 10 minutes to whip up!
VEGAN BANANA CHOCOLATE CHIP BREAD INGREDIENTS
Whole wheat flour
Flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
Ripe bananas (1 cup mashed)
Avocado oil
Coconut sugar
Apple cider vinegar + baking soda
Pure vanilla extract
Chocolate chips (sugar-free)
HOW TO MAKE FLAXSEED EGG
Flax egg is such a great egg alternative in baking! Even if you’re not vegan it’s really worth trying. The best part is that you can always keep the flaxmeal or flaxseeds in your pantry. It’s so helpful when you run out of eggs!
To make the flaxseed egg, combine 1 tbsp with 2 1/2 tbsp of filtered water and let it rest for 5-10 minutes until a gel-like consistency has developed. You will need 2 flax eggs for this vegan banana bread recipe, so whisk 2 tbsp of flax meal with 5 tbsp of water.
GRINDING FLAX SEEDS FOR FLAX EGGS
To make the flaxmeal, place flaxseeds in a high-speed blender and process until finely ground on a high speed.
HEALTHY VEGAN BANANA MUFFINS
To make these vegan muffins healthy, consider using whole grain flour. You can also use oat or spelt flour!
Use unrefined coconut oil or avocado oil if you are not a fan of coconut taste.
Sugar-free chocolate chips. These stevia sweetened chocolate chips are my all time favorite!

Ingredients
1 3/4 cup whole wheat flour
2 flax eggs (2 tbsp flaxseed meal + 5 tbsp water)
2 ripe bananas (1 cup mashed)
1/3 cup avocado oil
1/3 cup coconut sugar
1 tsp apple cider vinegar
1 tsp pure vanilla extract
1 tsp baking soda
1/2 cup chocolate chips (sugar-free)
Instructions
Start with making flax eggs. In a small bowl, mix flaxseed meal and water. Let rest about 5 minutes to thicken. Preheat oven to 350F and grease a muffin pan or line in with muffins tins.
In a large mixing bowl, mash the bananas. Mix in flax eggs, oil, coconut sugar, apple cider vinegar and vanilla extract.
Add in flour and baking soda. Mix dry and wet ingredients together. Fold in chocolate chips.
Pour into prepared pan and bake for 25 minutes until toothpick inserted in the middle comes out clean.
