Tahini Soba Noodles with Crispy Tofu. You’ll love this simple, nutritious and satisfying Asian-inspired meal. It’s made gluten-free and vegan. Perfect for a lighter summer meal!
I’m on the biggest tofu kick lately. I took me a while to actually get used to and like it though! It’s all about how you cook it!
Make sure you press the tofu before cooking. Wrap it in paper towels, place it on a plate and put something heavy on top (cast iron skillet, books etc). Press tofu for minimum 10-15 minutes to remove all the liquid. That will allow the flavor to get in as well as change the texture from soft and spongy to firm. Also make sure to get extra firm tofu for dishes like these tahini soba noodles or vegan curry noodle bowls.
The only ingredients you need to make these tahini soba noodles:
- soba noodles (make sure they’re made out of only buckwheat if gluten free)
- sesame oil
- ginger
- green onion
- tahini
- coconut aminos
- lemon juice
Once you mix all the ingredients, toss it with soba noodles, add sliced cucumbers and tofu. Feel free to add any veggies like carrots matchsticks, edamame or broccoli.

6 oz soba noodles 1 tsp sesame oil 2 green onions, chopped 1 tsp fresh ginger, minced 3 tbsp lemon juice 1/4 cup tahini 1/4 cup coconut aminos 1 cucumber, sliced microgreens or cilantro to garnish Crispy Tofu: 8 oz extra firm tofu 2 tsp sesame oil 1 tbsp coconut aminos 1/2 tbsp maple syrup salt Remove the tofu from the package and wrap it in paper towels. Place it on a plate and put something heavy on top (cast iron skillet, books etc). Press tofu for around 10-15 minutes to remove all the liquid. Heat the oil in a large cast iron skillet over medium heat. In a small bowl mix coconut aminos and maple syrup. Once the pan is hot, add tofu, pour over the marinate and fry 2-3 minutes per side until crisp and golden on all sides. Remove the tofu from the skillet.Ingredients
