And you probably already have all the ingredients on hand! The great thing is, you can use frozen strawberries instead of fresh or substitute for any fruits that are currently in season!

Baking soda + apple cider vinegar or lemon juice

TIPS FOR THE BEST FLUFFY MUFFINS
Make sure to bring cold ingredients like eggs and milk to a room temperature.
Don’t over mix the batter. When mixing butter and sugar, whip until fluffy. But when adding the flour, stir until just combined. Fold in strawberries carefully at the end.

1 cup flour
1/2 tsp baking soda + 1/2 tsp apple cider vinegar or lemon juice
1/4 cup butter, softened
1/3 cup raw sugar
1/4 cup milk
large egg, room temperature
1/2 tsp pure vanilla extract
1 cup strawberries, chopped
CRUMB TOPPING
3 tbsp butter, softened
1/4 cup sugar
1/4 cup flour
Instructions
- Preheat oven to 350 degrees F and line line 6 muffin cups with paper liners.
- To make the crumb topping, mix all the ingredients with your hands until crumbles form. Cover up and place in the freezer until ready to use.
- In a bowl, stir flour and soda. Set aside. Whip butter and sugar until creamy. Add egg, milk and mix for a couple more minutes until light and fluffy. Add in vanilla and vinegar.
- Add in flour, half at a time and mix until just combined, using a wooden spoon. Don’t over mix.
- Fold in strawberries. Divide the batter between muffin tins, until about 3/4 full and top with crumb topping. Bake for about 25 minutes or until toothpick inserted in the middle comes out clean.
